I’m sorry I haven’t visited any blogs, or posted anything it
the last few days. But, I have a good excuse! I ran my first Half marathon on
Sunday which I will tell you all about soon. For now, as a token of gratitude
and thank Here’s an easy healthy recipe for Oat Muffins with Strawberry “icing”.
What you will need (Recipe makes 4 cupcakes):1/3 Cup Oats
1 TBSP Ground Flax Seed
1 Ripe Banana
¼ cup egg whites
You can add stevia for extra sweetness
Mush the banana, egg whites, oats and Flax seed together.
Bake muffins at 350 F for 20-25 inutes (or until Golden Brown)
Once cool, remove from tray and add a dollop of Strawberry Greek Yogurt (I used the fat
free kind from IOGO)
A perfect treat without the guilt! Happy Wednesday everyone.
