January means most people try to go back to eating a more balanced diet It can get difficult to find new recipes, that are quick, easy, healthy and tasty. The following salad takes 15 minutes to make and has very few ingredients. I dare you to try it.
Ingredients:
One bunch Kale (washed and chopped)
1/2 fresh lemon
1.5 cups cooked chic peas
1 cup cooked lentils
1 tbsb Spicy mustard or mustard of your choice
Salt and Pepper to taste
Take your kale, wash, pat dry and chop.
Line baking sheet with foil and spray lightly with pam/or other cooking spray.
Lay kale flat on a cookie sheet.
Add salt and pepper to taste and squeeze fresh lemon over.
Bake at 400 for 10 minutes.
Kale will be crispy around the edges but may also look slightly wilted if you havent removed all the water.
You can use canned chic peas and lentils to save time, but I soaked the night before and boiled on the stove top prior to making the the Salad.
- While the kale is baking, Take your cooked lentils and chic peas and combine in a pot.
- Add 1 tbsp of spicy mustard of your choice. I used Provençal. warm the chic peas and lentil over low to medium heat and stir in the mustard until the lentils and chic peas are coated. 3-5 minutes.
You'll even have time to wash the cutting board and put away dishes while the kale is still baking.
